Fresh Pasta

Ingredients

500g tipo 00

2 eggs

Pinch of salt

150g water(approximate)

Directions

Mix. Knead

Rest 45 minutes.

Cut piece off, flatten with hands then dough roller with liberal flour to prevent sticking.

Fold over then again and again.

Slice thin with knife. Sprinkle more flour. Toss and loosen slowly.

Put in boiling salt water for 2ish minutes.
